# pound chicken breast (boneless and skinless), cut into 2 inch pieces
# 3 tablespoons extra virgin olive oil
# 1 1/2 tablespoons red wine vinegar
# juice of 1 lime
# 1 teaspoon chili powder
# 2 cloves garlic, minced
# 1/2 teaspoon onion powder
# 1/2 teaspoon paprika
# 1/4 teaspoon cayenne pepper
# 1/4 teaspoon black pepper, ground
# 1/4 teaspoon salt

Combine all ingredients, except for the chicken, in a medium mixing bowl. Place chicken pieces in a shallow dish, pour sauce over it, making sure to coat it well. Cover dish and place in the refrigerator for 1-4 hours.

Preheat grill. Thread chicken pieces onto skewers. If using bamboo skewers, make sure they have soaked in water for at least 1 hour before using. Place chicken kebabs on grill and cook on medium-high heat for 10-15 minutes.

Although I know little about wine and am only into a few cheaper ones there’s a fair amount of interest to me in this collection of essays or papers from talks given at an international conference in London in 2004. The new copy I have checked out from a library has the book jacket on the left, which might be from England. The jacket on the right might be what’s more likely to be found in bookstores and libraries in the United States. Under the different jackets apparently the books are identical.

So far, apart from interesting information and speculation, the essay I can connect and agree with the most is by Kent Bach, who says this straight off in his first paragraph:

“I don’t write tasting notes, and I can’t say I get all that much out of professional tasting notes — I certainly can’t tell from reading one what the wine tastes like. I’m keen to try wines of all sorts, and for me there’s no substitute for tasting them myself. I recommend wines to people, but the only way I know to justify a recommendation is to pour a glass.”

However, there are two big ways in which we differ: Kent Bach teaches philosophy at San Francisco State University, whereas I only majored in philosophy as an undergraduate in a small state university over 35 years ago. And he has (I learned at the following website) an amazing 4,000 bottles of wine in his cellar, whereas probably at about our peak storage capacity now we have 5 bottles of wine in our refrigerator. (Our house here in Florida is often too hot — near 80 degrees during the long summers — for wine storage.) Also, I bet he spends many times over what I’m willing to pay for a bottle of wine (i.e, good cheap wine). But if I had his resources and leanings I could easily have “fallen” into such an extreme and satisfying indulgence.

“Studies suggest that the experience of smelling and tasting wine is extremely susceptible to interference from the cognitive parts of the brain. Several years ago, Frederic Brochet, a Ph.D. student in oenology at the University of Bordeaux, did a study in which he served fifty-seven participants a midrange red Bordeaux from a bottle with a label indicating that it was a modest vin de table. A week later, he served the same wine to the same subjects but this time poured from a bottle indicating that the wine was a grand cru. Whereas the tasters found the wine from the first bottle “simple,” “unbalanced,” and “weak,” they found the wine from the second “complex,” “balanced,” and “full.” Brochet argues that our “preceptive expectation” arising from the label often governs our experience of a wine, overriding our actual sensory response to whatever is in the bottle.

“Thus there is a bolder kind of forger who actually substitutes one type of wine for another. He often works with genuine bottles bearing genuine labels, obtaining empties from restaurants or antique shops, filling them with another type — or types — of wine, and replacing the cork and the capsule, assuming that the status-conscious buyer will never taste the difference. And, in many cases, this assumption is right. Sutcliffe [Serena Sutcliffe, the head of Sotheby's internatinal wine department] believes that the vast majority of fake wines are happily enjoyed. Rajat Parr, a prominent wine director who oversees restaurants in Las Vegas, told me that several years ago some of his customers ordered a bottle of 1982 Petrus, which can sell in restaurants for as much as six thousand dollars. The party finished the bottle and ordered a second. But the second bottle tasted noticeably different, so they sent it back. The staff apologetically produced a third bottle, which the diners consumed with pleasure. Parr closely examined the three bottles and discovered the problem with the second one: it was genuine.”

Opened late this afternoon. Chilled, it tasted quite good to us. I funneled the remaining half bottle into two 187 ml. bottles, sealed them tightly with the screw caps, and stored them back in the refrigerator.

None of the many taste descriptions of wines I’ve read have told me how the few I’ve tried tasted to me. Those who might want to try this wine should probably already know and like somewhat dry, white wines (this one is actually pale yellow), want to try unfamiliar wines, and be happy to spend to , without assuming that’s too little or too much. This bottle cost me nearly , with tax, on sale marked down from its supposedly usual price in a nearby grocery store. It was better than another more modest Sauvignon Blanc I bought for only which wasn’t bad but not nearly as good as a Spy Valley Marlborough (NZ) 2005 that was touted at a wine tasting I went to a couple days ago. So you know that some very cheap wines can satisfy me and there are probably a good many more expensive wines I might not like as well. Although I’m reading up on wine a lot now and trying as many as I can at tastings I’m certainly no wine connoisseur and don’t aspire to be one.
